One of the all time favorite Rajasthani delicacies is Garlic Chutney. No matter if you have a side dish for roti (flat bread) or not, you should certainly have Garlic chutney on plate. Having said that, the top-charts on my Sunday to-do’s is making Garlic Chutney.
There are many ways to make it, the most authentic one is to make it in mortar and pestle by slowly grinding the ingredients together. This process leaves some solid chunks for that very strong flavour of ingredients. But I like my chutney in a paste form so I simply grind it in my mixer. Easy-pizzy!
Lets not wait more and here I go with my version of Garlic Chutney.
Garlic- 1 Pod
Oil- 4tbsp (Yes you have to be generous with oil)
Cumin seeds- 1tsp
Roasted cumin seeds- 1tbsp
Red chilli powder- 2tbsp (spicier the better)
Salt to taste
- In a mixer, grind garlic, onion and red chilli powder, roasted cumin seeds and salt. Add water for that smooth paste.
- In a pan add oil and and put cumin seeds to it.
- Add the garlic chutney paste in the oil and cook it for 7-8 minutes till oil leave its side.
- Serve it in a small bowl garnishing with roasted cumin seeds
