Here I am again with my Rajasthani twist- Kachri Chutney.
Kachri is a small form of wild cucumber, one of the very famous vegetable found in Rajasthan. It is so versatile that you can not only form chutney out of it, but dry it and use as a substitute of sour spice or make fresh green vegetable out of it.
Kachri Powder- 2tsp
Asafoetida (hing)- 1 pinch
Garlic- 3 pods
Red Chilli Powder- 2 tsp
Turmeric- 1/2 tsp
Roasted cumin seed powder- 1tsp
Salt to taste
Water- 5 tsp
- Mix the kachri powder, garlic, salt, red chilli powder, turmeric and roasted cumin seed powder and water in a grinder.
- In a pan take oil and add asafoetida as well as the kachri mixture to it.
- Let it simmer for 5-7 minutes till spices leave its sides.
- Remove from fire and garnish with fresh cut coriander.
