Kachri Chutney

Here I am again with my Rajasthani twist- Kachri Chutney.

Kachri is a small form of wild cucumber, one of the very famous vegetable found in Rajasthan. It is so versatile that you can not only form chutney out of it, but dry it and use as a substitute of sour spice or make fresh green vegetable out of it.

 Kachri chutney is my all time favorite because of its spicy tangy flavor and the fact that it has always stood out in our dinner get-togethers. I do not get it in Mumbai so I usually ask my Mum to dry it and send the powder to me. I am gonna use the same in the receipe below.

Kachri Powder- 2tsp

Oil- 4tsp

Asafoetida (hing)- 1 pinch

Garlic- 3 pods

Onion- 1

Red Chilli Powder- 2 tsp

Turmeric- 1/2 tsp

Roasted cumin seed powder- 1tsp

Salt to taste

Water- 5 tsp

  1. Mix the kachri powder, garlic, salt, red chilli powder, turmeric and roasted cumin seed powder and water in a grinder.
  2. In a pan take oil and add asafoetida as well as the kachri mixture to it. 
  3. Let it simmer for 5-7 minutes till spices leave its sides.
  4. Remove from fire and garnish with fresh cut coriander.
