Baked Vegetables in Port Wine Sauce

When it come to eating light, the first option strikes my mind is Baked Vegetables because of following reasons:

1) Hassle free cooking

2) Super Healthy

3) Variety of flavours

4) Easy to experiment with.

Well last reason because I always try to add one or the other twist to my Baked Vegetables and this time it was “Port wine sauce“.

So lets get direct to receipe:

Cut the veggies you like in bigger chunks. Well I used:

Vegetables:

Zucchini

Tomatoes

Carrots

Capsicum

Baby Corns

Post wine Sauce Ingredients:

Port wine- 1 cup

Garlic- 3 pods finely chopped

Butter- 1 tsp

Soy Sauce- 1/2 tsp

Salt & Pepper

Method:

Take a pan and sizzle the butter in it for 5 seconds and saute chopped garlic for half a minute. Now add port wine in the pan and sprinkle the soy sauce. Mix it and leave the mixture till it reduces to half. Sprinkle seasonings on top. Keep it aside to cool down.

Once the sauce cools down, coat each chunk of vegetable with this sauce nicely. Now grease a baking tray with olive oil and put all veggies in it. Put the tray in oven at 180 degrees for 15 minutes.

Your baked vegetables are now good to serve. Eat it with garlic bread or pasta, your choice 🙂
